Summer Salad RecipesSomething about hot summer days makes me crave a creative salad.  Summer salads are the perfect crowd-pleasing dish for a fast throw together meal. Plus with all the fresh seasonal fruits and veggies available there are endless salad combos at your fingertips.

Today, I’m sharing my top 5 favorite recipes that I’m totally hooked on. Any of these 5 will perfectly hit your sexy summer body macros as well. It’s a win, win!

Summer Corn Salad with Chicken

Servings 4

Ingredients

  • 1 lb Grilled Chicken
  • 2 cups Fresh or frozen corn, defrosted (Non GMO)
  • ½ cup Grape tomatoes halved
  • ¼ cup Crumbled goat cheese or feta
  • ⅛ cup Red onion, finely chopped
  • ⅛ cup Basil, thinly sliced
  • 2 tbsp Extra-virgin olive oil
  • 1 tbsp Balmamic vinegar
  • 1 Lime (Juice)
  • Salt & Freshly ground black pepper

Notes

Per Serving: Calories 399, Fat 18g, Carbs 18.5g, Protein 42g

Blackberry Chicken Salad

Servings 4

Ingredients

  • 1 lb Grilled Chicken Breast
  • 6 cups Mixed greens lettuce
  • 1 cup Fresh blackberries
  • 1 Ripe avocado
  • ¼ cup Red onion sliced
  • ½ cup Walnuts halves

Blackberry Dressing

  • ½ cup Blackberries
  • 2 tsp Dijon Mustard
  • 2 tbsp Balsamic vinegar
  • 2 tbsp Extra virgin olive oil
  • 2 tbsp Local clover honey
  • 1 tsp Coconut aminos or soy sauce
  • Salt & Freshly ground black pepper

Per Serving Salad + Dressing: Calories 488, Fat 27g, Carbs 23g, Protein 40g

Summer Berry Salad

Servings 4

Ingredients

  • 1 lb Grilled Chicken Breast
  • 6 cup Mixed greens lettuce
  • ½ cup Fresh strawberries sliced
  • ¼ cup Mandarin oranges
  • ½ cup Fresh blueberries
  • ½ cup Walnuts halves

Blackberry Dressing

  • ½ cup Blackberries
  • 2 tsp Dijon Mustard
  • 2 tbsp Balsamic vinegar
  • 2 tbsp Extra virgin olive oil
  • 2 tbsp Local clover honey
  • 1 tsp Coconut aminos or soy sauce
  • Salt & Freshly ground black pepper

Crunchy Asian Chicken Salad

Servings 4

Ingredients

  • 1 lb Grilled Chicken Breast
  • 6 cups Shredded cabbage
  • ½ cup Mandarin oranges
  • ⅛ cup Sunflower seeds
  • 1 Small Can Water chestnuts

Satay Dressing

  • ½ cup Creamy peanut butter
  • 2 tbsp Fresh lime juice
  • 3 tbsp Rice vinegar
  • 3 tbsp Coconut aminos
  • 1 tbsp Honey (or monk fruit sweetener)
  • 1 tsp Sesame oil
  • 1 tsp Sriracha
  • ¼ tsp Ground ginger
  • 1 Clove garlic roughly chopped
  • 1-2 tbsp water or coconut milk (if needed)

Per Serving Salad + Dressing: Calories 637, Fat 25g, Carbs 52g, Protein 51g

Watermelon Mint Feta Salad

Servings 4

Ingredients

  • 3 cup Cubed seedless watermelon
  • 3 tbsp Extra virgin olive oil
  • 1 Whole lime, juiced
  • ½ tsp Salt
  • Dash Black pepper
  • ½ cup Fresh mint leaves, chopped
  • ½ cup Crumbled feta cheese (sheep's milk feta preferred)
